Cozy Chicken and Vegetable Torteliini Soup

I love soup!!! No matter the time of year, I am down for a good bowl of soup. Most people think that’s a little weird in summer, so I’m always grateful when fall comes around and I have a good excuse. I love a good broccoli cheddar or vegetable and don’t get me started on taco soup, but I discovered a new favorite this fall in the Country Door cookbook! This new favorite is their Chicken and Vegetable Tortellini Soup. It is SO cozy, SO easy and beyond delicious!!

The whole process was literally so easy. Once I had all my ingredients, it took 15 minutes. No joke! You can, of course, let things stew and flavors marinateba little longer, but I made the whole pot in 15 minutes. It was delicious! Chicken & Vegetable Tortellini Soup

Serves 6

Supplies:

  • Large soup pot
  • 2 tbsp olive oil
  • 1/2 cup onion dived
  • 1/2 cup carrot peeled and diced
  • 3 cloves garlic minced
  • 1 deli roasted chicken diced and bones discarded
  • 2 32 oz boxes of low sodium veggie & chicken broth
  • 14 1/2 oz cans diced tomatoes
  • 1 9 oz package cheese tortellini
  • 3 cups baby spinach
  • Grated parmesan cheese for grating

In large soup pot, heat the olive oil over medium heat. Add onion and carrots. Cool for 5-6 minutes over medium heat or until the onion and carrots begin to soften. Add garlic and cook for about 1 minute, stirring often. Mix in chicken broth and diced tomatoes with the juice. Bring to a boil. Reduce heat to medium. Add tortellini and cook for about 8 minutes. Add spinach and cook for 2 minutes or until the spinach is a little wilted. Remove from heat, season with salt and pepper, garnish with parmesan cheese and enjoy!!
